‘Tis The Season

It’s been a very busy spring thus far and race season is definitely underway. We have always enjoyed participating in organized events as a fun way to commit, work and train towards a goal. We also like to get the kids involved, one way or another, whenever we can. Here’s a quick summary of what we’ve been up to lately.

Sun Run 2012 T-ShirtVancouver Sun Run 10K, April 15
When Dawn and I signed up to do the Vancouver Sun Run this year, we both set out to accomplish new personal bests and with each others support and a little help from an Ample Ant (Aunt) who watched and waited with the kids at the finish, we managed to pull it off! The Sun Run organizers do a really good job of making this a family friendly event as there is a Kids Zone set up in BC Place that provides plenty of kids activities and entertainment. If you have kids that want in on the run action or if you would like to do a shorter run with the family, there is a 2.5K Mini Sun Run that starts before the 10K Sun Run and it looks like a fun run for the whole family. We’ve never done it ourselves but perhaps it’s something to consider for the future. If you’ve done the Mini Sun Run with your family, we’d love to know how it went.

Suburban Rush Kids Race, April 28
Suburban Rush is an off-road, trail running and mountain biking adventure race with mystery challenges along the way. Dawn and I opted out of this race and decided instead to register and fully support Malaya in her first kids bike race which was also part of the event. The Kids Race for ages 3-7 years was bike-only and, depending on the age group, covers a short 500m-1km loop with challenges along the way (i.e. a bean bag toss). With Malaya’s new found love for biking, we signed her up for this non-competitive event and she had a blast! I know she looks a little nervous in the photo above but that’s just her intensely listening to the race instructions being given out. At the end, each kid received a participant ribbon and a chocolate chip cookie!

BMO Vancouver Half Marathon, May 6
This was Dawn’s first and my third go at the BMO Half Marathon. A 7:00AM start made this a little too early for us to wake up the kids and bring them to the event. Thanks again to The Ample Ant (Aunt) who watched our girls while we ran. Unless they’re running the race with you, there are definitely other ways to get the kids involved; like cheering the runners on from the sidelines! One of the most uplifting things about this race were all the people that came out to cheer and support the runners along the route. It’s amazing how cheers of encouragement can give you an extra boost to keep going.

Spartan Wall ClimbSpartan Sprint, May 12
The Spartan Sprint is a 5k race comprised of mud runs, obstacles, trail racing, physical challenges and mental challenges all in one. Dawn did this one on her own as the kids and I cheered her on from the start to the finish line. The event organizers also held a kids race (ages 4-13) as a component of this event and it is a much tamer and cleaner version of the adult race. Our kids are still too young to participate but I watched the older kids race and it looked like a lot of fun. They were divided by age groups and completed 0.5 -1 miles of small obstacles.

Next up:

The Rush, June 23
The Rush is an urban adventure race and scavenger hunt where teams of two scour the streets of Vancouver (and beyond) to find clues, reach checkpoints and complete challenges. It’s a one-day amazing race style challenge and fundraiser event for the B.C. Lung Association. We highly encourage you to join us for this event. The grand prize is a trip for two around the world! Vietnamese Beef Stew (Bo Kho)

This gluten-free Vietnamese stew is becoming a regular in our dinner rotation, especially during the colder months. It’s something my mother cooked for the family while growing up and although my version of the stew may not be as authentic as mom’s, the kids seem to enjoy it and that’s good enough for me. The stew may be served with either white rice, a fresh baguette or rice vermicelli. Since noodles tend to be a big hit with Malaya and Mahal, we typically eat this with vermicelli, as pictured above.

For the spices, I use a pre-packaged Bho Kho spice blend (pictured below) from T&T supermarkets.  You could probably find it at other Vietnamese or Asian grocery stores as well. Using the spice blend is convenient and the fragrant combination of paprika, anise, garlic, chili, onion, ginger and cloves make for a flavourful and aromatic stew. I also add some lemon grass, along with fresh garlic and ginger to kick it up a notch (BAM!). I had some challenges determining the measurements of the ingredients, as I typically cook this stew by taste, rather than by measurements. That said, the measurements are approximations, so please feel free to deviate from my measurements and experiment with the recipe to suit your taste. Also, I find that this stew tastes best a day after it is made as the flavors intensify with time.

   

INGREDIENTS:

Stew:
2 tbsp coconut oil or vegetable oil
3 to 4 cloves of garlic, crushed
2 inch piece of ginger, peeled and sliced lengthwise into 4 pieces
1 stalk of lemongrass, white end bruised and sliced into 4 inch sections
3 tbsp. tomato paste
1/2 cup of Bo Kho spice blend
2 lbs. stewing beef cut in 1 inch cubes
3 to 4 beef bones or oxtail (optional)
4 carrots, peeled and sliced into 1 inch pieces
1 jalapeno, sliced (optional)
10 cups of water
1 tbsp. salt
Fish sauce, to taste

1 package of rice vermicelli

Garnish:
1 medium onion, sliced paper thin
1 bundle of green onions, sliced
1 small bunch of cilantro (stems and leaves), chopped

Accompaniments:
Sambal Oelek (garlic chili sauce), to taste
Bean sprouts
Lime wedges
Basil

DIRECTIONS:

  • Heat oil in large pot on medium to high heat. Once heated, add garlic, ginger and lemon grass and fry until fragrant, about 1 minute.
  • Add stewing beef (and beef bones, if using) to pot and lightly brown on all sides.
  • While beef is browning, combine tomato paste and spice blend in a small bowl. Add blended paste and spices to pot and stir on medium-high heat for 1 to 2 minutes, until beef is coated with spices.
  • Add 10 cups of water. Bring to a boil and reduce heat to simmer and cover. Simmer for approximately 1.5 to 2.5 hours or until beef is tender.
  • While stew is simmering, prepare the garnish by tossing the onion, green onions and cilantro in bowl until mixed.
  • Prepare rice vermicelli according to package instructions, ensuring not to overcook the noodles. Rinse in cold water.
  • Once the beef is tender, add salt, carrots and jalapeno (if using) to the stew. Cover and continue to simmer for 10 minutes or until carrots are tender.
  • Add fish sauce to stew to taste.

ASSEMBLY:

  • Divide desired amount of vermicelli to large soup bowls. Reheat noodles in microwave until warm.
  • Add about 1/4 cup of garnish on top of noodles.
  • Bring stew to a boil, then add desired amount of stew, beef and carrots to noodles.
  • Serve with accompaniments as desired.

Biking and Hockey Predictions

The 2012 NHL Stanley Cup Playoffs commence this week and I thought I would post something hockey related. This hockey analysis is not of the same calibre as TSN, Sporstnet, CBC Sports, or our friends at the Canucks Hockey Blog. Instead, it’s a video of our 3 year old giving her opinion of this year’s Stanley Cup finals and dropping the names of a couple of her favourite players. She took a break from riding her (run) bike, which is quickly becoming one of her favourite outdoor activities, to share her thoughts with us. I couldn’t make out what her last answer was but it was Canucks related so hi-five to that!
